Italian Garifuna Food
Since we can't eat gluten, we're always on the lookout for practical gluten free alternatives. The Garifuna people, who are black descendents of slaves who were shipwrecked or dumped at sea for various reasons, have a very distinct culture. One of their typical foods is casabe, which is shredded, baked tapioca root. It comes out looking like a thin crust, which works quite well for pizza. It's also very tasty as toast with garlic and butter or sugar and cinnamon. The girls eat it like it's going out of style.
